Apple-Pumpkin Crumbles Muffin

Did you say “Muffin”?? Yes I did!!!! And Apple-Pumpkin Crumbles Muffins are even better than any muffin. 🙂
These Apple-Pumpkin crumbles muffins adopted from a recipe from whatsinthepan.com are to dieeeeee for! Simple ingredients available in the pantry and are perfect for Christmas morning breakfast. Counter to oven in literally 15 minutes and that’s definitely my kinda baking. B-)
I used gluten free Bob Mills gluten free all purpose flour. But feel free to swap with equal parts of all purpose flour or paleo flour.
I had some apples lying around, so make it into apple-pumpkin muffins. Options are endless to get creative with this basic recipe. Here is my take on it with a tad bit of tweak to the original recipe.
Apple-Pumpkin Crumbles Muffin

Ingredients
- Dry Ingredients:
- 1 3/4 cups Bob mills gluten free flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp himalayan salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp pumpkin spice
- 1/2 cup chopped pecans
- 1 chopped green apple
- Wet Ingredients:
- 2 large eggs room temperature
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- Toppings:
- 1/2 cup chopped pecans
- 1 chopped green apple
- 2/3 cup brown sugar
- 1 tsp pumpkin spice
- 1/3 cup flour
- 1/3 cup softened butter
- Prep:
- Leave butter out to soften
- Leave eggs out to get to room temperature
- Preheat oven to 350 deg F
- Line muffin tray with paper liners
Instructions
In a large bowl mix all dry powder ingredients together. Once mixed add pecans and apple and combine.
In another bowl whisk together all wet ingredients until blended.
Tip wet mix into dry mix.
Fold to combine.
Use a large ice cream scoop to fill 12 muffin cups.
- Toppings:
Mix all dry ingredients until combined. Then add chopped soft butter and cut into the mix using a fork until crumbly.
Spread crumbles on top of each muffin.
Bake for about 25-35 minutes until a toothpick inserted comes out clean.
Allow to cool for 10 minutes, then transfer to cooling rack. #devour
